Pickling Mallet Information
Design- This pickling mallet is sized for use in small and medium mason jars. The handle is large enough to spread the force through the palm, and the packing end is slightly pointed to promote good cell wall disruption, the key to effective fermentation.
Materials- The woods used are domestic FSC certified birch, fir, and maple. They will darken over time.
Adhesive- Titebond III, FDA approved for indirect food contact, highly water-resistant.
Finish- Organically inert hot mineral oil.
Care- Rinse by hand only in warm water and dry promptly. Do not use soap. Do not soak in water or put in dishwasher. Apply a light coat of a neutral oil such as mineral oil periodically to preserve appearance and prevent staining.
Appearance- Colored foods such as beets may stain the mallet. Lemon juice will remove most stains.
Tips for use- Grip handle so that small dowel projects from between middle and ring fingers. Work surface should ideally be about hip-high.
